Abigail continues to amaze me as to how tough she is and is moving right along in getting back to her normal happy self. My wonderful wife is a kick butt researcher, she found a great recipe and made KetoCal muffins tonight for Abigail. Abigail loved them. She is still more emotional than normal but she is more aware of her surroundings these days and is engaged in everything she does.
Please excuse the messy kitchen table that doubles as my desk I try to keep it clear but it is a losing battle!

The best way to describe the muffins as very dense corn bread slathered in butter.....mmmmm buttttterrrrr

There are recipes right on the KetoCal website. We were given a booklet of recipes during the induction week; it never occurred to me that you might not have it! We still have to get the dietician to figure out the portions, though.
Jade had beef stew for supper tonight. The dietician said we could use homemade beef broth as "water" in the recipes (which just means she just gets a little extra fat) and the other ingredients are beef tenderloin, turnip, carrots, celery, and butter (with a side of cream). Jade loved it!
Another favourite recipe is chicken soup, which has OXO chicken bouillon, vegetables (we use either carrots or acorn squash), chicken breast, butter, and cream (or the cream can be on the side).
Glad Abigail is feeling better!
Isobel and I are looking at the picture of Abigail and Shelby at the daddy desk/dinner table/homework table. Iz wants a different picture of Shelby, one where she's "standing up with her long hair showing." Can you deny a sweet little girl such as your darling neice? No, I thought not.
p.s. Also, we're very happy to hear that Abigail is doing so well!
